双乙酸钠的合成及对霉菌的抑制作用

摘要:
以醋酸和纯碱为原料,不加溶剂合成双乙酸钠,并用双乙酸钠、苯甲酸作防霉剂加入培养基,在无菌条件下接种黄曲霉菌和球毛壳实验霉菌,比较双乙酸钠和苯甲酸对霉菌的抑制作用。结果表明,n(醋酸):n(纯碱)为(4.0~4.2):1,反应温度60~70℃,醋酸加料时间40~60min,反应时间120~180min时,所得产品质量合格,收率可达96%以上。双乙酸钠和苯甲酸质量分数为0.3%时防霉效果接近;质量分数为0.1%时,二者对黄曲霉防霉效果与空白相比都有极显著性差异(P<0.01),双乙酸钠优于苯甲酸,对球毛壳的防霉效果也是双乙酸钠的明显优于苯甲酸的(P<0.05)。双乙酸钠是一种防霉效果优于苯甲酸的防霉防腐剂。

Abstract:
The sodium diacetate (synthesized by acid and sodium carbonate without any solvent) and the benzoic acid were added into the culture medium in the experiment of aflatoxins and glibismycin under axenic condition respevtively,to compare with their antiseptic effects. Under the conditions of n(acetic):n(sodium)=(4.0~4.2):1,60~70℃ of reaction temperature,feeding of acetic for 40~60 min,120~180 min of reaction time,96% of products were produced that met to FAO/WHO standard.Sodium diacetate and benzoic acid had similar antiseptic effects when the mass fraction of them was 0.3%,but they both showed extremely significant difference(P<0.01) comparing to the control when the mass fraction of them was 0.1%,and sodium diacetate was better than benzoic acid.In the resistance to globismycin,there was significant difference(P<0.05) between sodium diacetate and benzoic acid.It is indicated that sodium diacetate is a better antiseptic than benzic acid.
