α-葡聚糖酶及其在国内制糖工业中的应用研究进展

摘要:
制糖工艺过程出现的葡聚糖主要为α-葡聚糖,它的存在会使糖汁糖分损失,糖液粘度增大,糖液过滤性降低,晶体伸长,这不但增加精炼成本,同时也严重影响产品品质。糖浆澄清仅能除去约20%的α-葡聚糖,而利用α-葡聚糖酶水解α-葡聚糖是一种理想的方法。本文综述α-葡聚糖酶及其在国内制炼糖厂的应用研究进展,并对该研究领域进行展望。基因工程技术和蛋白质定向进化技术在提高α-葡聚糖酶酶活、热稳定性、增强底物特异性等方面发挥着重要作用,将成为今后的研究热点。

Abstract:
α-Dextran is one of the glucans which causes marked harmful impact on sugar production.The presence of dextran in sugar juice will lead to severe sugar loss, increased viscosity of the sugar flow, reduced filter syrup, elongated crystals, expensive yield loss, and declined quality of sugar.Syrup clarification could only remove about 20% of the α-dextran.Use dextranase to hydrolyze α-dextran is an ideal method.This paper reviewed the developments status of α-dextranase and its application research in domestic sugar industry, and prospected the future picture of this field.Gene engineering and protein directed evolution techniques will play an important role in improving α-dextranase activity, thermal stability and substrate specificity, and become the research hotspot in the future.
